An easy way to configure periodically checking for messages for all folders except the inbox
is to use *Apply to all ...* in the three-dots menu of the folder list and to tick the bottom two advanced checkboxes.
The maximum number of simultaneous folder connections for Gmail is 15,
so you can synchronize at most 15 folders simultaneously on *all* your devices at the same time.
For this reason Gmail *user* folders are set to poll by default instead of synchronize always.
